1999 9-5 Temperature Gauge Fluxuation

I have a 1999 9-5 V6 with 75,000 miles. While driving the temperature gauge fluxuates wildly from normal to stone cold. When it goes stone cold the AC shuts down. The thermostat was replaced 2 months ago, so that's not the problem. When I turn the car off and restart it, temp goes to normal. Problem comes and goes. I took it in yesterday and the mechanic said they could not diagnose it unless they had it while it was going bonkers. Check engine light does not come on. Anybody else have this problem and know what it is? Thanks Mark.
