why do good tires go bad?

We all have noticed this- new tires are fabulously smooth & quiet. But with time (10k-20k mi) the road noise slowly builds, eventually becoming intolerable. The tires have been rotated, balanced, and potholes avoided, several brands of tires & specific types tried - all with the same result.
My 2000 Aero went through 5 sets in 85k mi because of noise, & my 2003 Aero is getting loud at 20k mi.
So just what is it that causes the deterioration? Does the body get hard & less compliant? Does the shallower tread trap air/noise? Is there something special to Saab?
I do not recall this being an issue on my cars prior to 2000.
