Pulling the hose off may or may not affect idle - if you leave it open, it's a vacuum leak. Plug it, and it'll have no effect to speak of.
I have a few tricks for turning an engine over. If it's a 5 speed, I find a patch of level ground. Put the car into 5th gear, and let off the brake. If you push the car, you can turn the engine. Actually, you rock the car some and look at the timing marks. It works pretty well and requires no tools. If the car is an automatic, I pull all the spark plugs - no compression braking that way - and turn the engine over with a socket. Ideally, you stick a socket on the main pulley, but that's a bear to get to. If the plugs are out, you can usually turn the engine by turning an accessory - I'll turn the AC compressor outer pulley, or the alternator - whatever pulley I can get a tool onto.
