rebuilding the calipers is not that hard...
Should work ok as long as you find the cylinders and pistons in good shape.
Also be sure on reassembly that the yoke slides easily in the grooves in the piston body, so both pads are applied with the same pressure on the rotor.
If one pad goes in, but not the other, sounds like the yoke is not sliding properly. When you apply the brake, the hydraulics need to be able to push one piston against the inner pad against the rotor, and also push the other piston (the 'back' one) against the yoke, which must move freely so it can pull the outer pad against the other side of the rotor.
