So, if I understand your post correctly, you have two (perfectly good) cars, neither of which you like, and you are contemplating an excruciating exercise in self punishment, in the hope that the result will provide a sense satisfaction, well being and accomplishment. Yes?

Rather than dismantling two serviceable examples of varying but indisputable rarity, I suggest an exercise of patience might likely provide a more suitable solution.

The list of colors and options available being somewhat limited, it should be fairly easy to specify what you want. With that in hand, patiently scour Saabnet and other sites where Saabs might be found. If you are in an area that has a local Saab club, then check it out. Put a Wanted ad in the Saabnet classifieds. Send a prayer out into the universe and see what responds.

Clean up the two cars you have and sell them to people who will enjoy them for what they are. Then go search for the car that most closely approximates your dream Saab. This will save time and money, which you may still expend later on things like Koni's and E-codes and gauges and...

Parting out a Saab should be an act of last resort, a reclamation and cherishing of parts of that which is no longer capable of moving forward as a whole.

Whatever your decision, enjoy your Saab for the fine and unique creature that it is.
