I think the key would be to find something that dries very easily. Any time you have a sandwich construction with 2 vapour barriers, any water that gets trapped between them will hang around basically forever and cause damage (rust/rot, etc). Water *always* finds a way to get in, so that is the issue. if it can dry from one side or the other (inside is the only choice here because the metal car body is a vapour barrier), then it can at least dry. The trouble is so many foams and fiberous "spongy" materials that would be good for an underlay, really retain moisture well. If you could use a rubber product that was glued really well to the floor such that there was no space between the vapour barrier layers, you might be ok... I suspect though that the glue would eventually fail (and the rubber mats are smelly)...
cork might be a possibility. Not smelly. not vapour barrier. I think it repels water to some degree and probably dries ok? you can get cork underlays for flooring... just a thought! I have also used a cork based rubberized flooring underlay that, like rubber could be adhered if you trust that... not sure of the sound damping qualities of these ideas...
