I have two go-to products. Most of the time I use Mother's back to black (on anything that is black. If I happen to have been doing my seats, I'll use the Lexol protectorant. Since I have a convertible, I use these pretty frequently. I really like the Mother's product and since it's made for exterior surfaces, I figure it must hold up pretty well.
Thus far my dash is still very supple - one of the main reasons I decided to drop $900 for a NOS (still in box) dash was that I knew it had never been subject to any degrading factor (other than age). I'd easily pay $1000 all over again for NOS, but the $2000 the current dash is fetching is rich even for my blood. When you figure that people regularly get $500-600 for a perfect used one, I'm feeling pretty good about my decision to spend 50% more for NOS.
Of course, those opportunities don't come up much, and I was lucky enough to find mine on C-List (no bidding involved. Called the guy up as soon as I saw it and drove over from VA to MD to pick it up at lunchtime the same day. One of the best uses of a couple of hours leave time I've made! Would have hated to give the guy any time to reconsider his price point.
