The oil pressure warning is extremely low - like 5 or 7psi or something. If you're getting a flash during cold startup, it's unlikely to have anything to do with the filter or the bottom end or anything. Such low pressure is almost nothing. My opinion is that the problem is going to be something specific with the lubrication circuit (like the bypass valve sticking or a weak pump) but it's just as likely (or more) you have an old, flaky switch. Mechanical oil pressure gauges are cheap, and they are easy to hook up so you'd know exactly what you're dealing with. Or, take a chance and just replace the switch - it's also cheap and easy to replace.
Personally, I wouldn't worry too much about the K&N filter. It's is (was?) made by Champion Labs, the same folks that make Mobil 1 and a heap of other premium filters. Admittedly, Champion got bought out by Fram, but I haven't heard any accounts of them cheapening the product. I mean, Fram would be stupid to buy and then discard a premium manufacturer's products and leave a gaping hole in the market like that for someone to take over.
All that said, I would not leave this as a mystery - you want to find out for sure why the light is happening. *Because* it's such a low pressure switch, you could theoretically be running around with 10psi of oil pressure, the light would be off, and you'd be slowly wrecking your motor. Get a gauge on their or replace the switch, but you need to rule out any possibility of too-low pressure.
