I have an 82 in my 89s and have also removed all AC related parts. At idle or in stop and go traffic, the gauge pretty much stays at 10 o'clock because the thermostat is wide open and the fan thermoswitch (which I didn't change from original) is doing all the temp regulation. Once underway, airflow to the radiator picks up, the thermostat takes over, and the gauge stays at 8 o'clock unless I hit a long uphill.
