You have several things to check out here:
Have you changed the brake fluid? Is the brake fluid accumulator doing its thing? Also, the ABS relays and other electrical problems could be causing some of your issues. Most of the answers can be found here on this forum and on the classic 900 board here. I've learned quite a bit on the subject from these forums.
The brake fluid question: If you've not done this, it needs to be done sooner, rather than later. However, the first priority is to have a working ABS system, as you'll need this to flush the brake fluid from the rear brake calipers. Brake fluid on ABS cars should be changed yearly--the system prefers clean brake fluid.
The accumulator: Spherical-shaped thingie on top of the ABS unit. If you have a working ABS system, you should be able to do a pumping test before you "lose" your pedal. Pretty easy to change, just remember to depressureize it before even thinking of removing it. As for a source, I bought my last one from a GM dealer (it doesn't have to be brand-specific, just call your fave dealer's parts counter. The accumulator's the SAME one used on late 1980s Buick Reattas. I paid under $120 for the one I bought last year online from a GM dealer.
Electrical issues: From what you're describing, I'm guessing that the black control relay in the ABS relay compartment is pitted inside. If you can borrow one or even try a known good junkyard part, that'd be a good test. A bad relay (pitted contacts) caused the same kinds of issues for me on my recently-departed C900 convertible--sometimes the pump would take several minutes to pressurize the system, sometimes the pump would run on and on after shutting the car off, etc. Also, consider cleaning the ABS electrical connections. A contact cleaner like CAIG's DeOx-It is ideal for electrical connections like these.
