Seems funny (if we can keep calling it that) that when changing out one part all the others go bad. That isn't to say that you didn't have multiple problems going on at the same time.
There is a fan speed control like the other dude mentioned and that could be the problem. As far as your cabin fan is concerned, I'd almost forget that as an issue. What happens there is the fan in the component gets funky and either starts squealing or stops moving all together. The fan simply draws air in forcing it to pass over the resistor on the inside. It judges the ambient temp and adjust automatically the fan speed and other bits. If you can't control the fan manually, it isn't the sensor.
