I have never done valve seals in situ, but I understand that instead of compressed air you can feed some stiff rope into the cylinders via the spark plug hole to keep the valves in place - may want to do more searching on this.
There are special valve spring compression tools for exactly this purpose; they consist of a lever with the fulcrum point bolted to the head.
