These cars do tend to be tough on front rotors and warp them relatively quick. Personally I don't feel it's ever worth turning them since they never seem to stay true too long and new high quality rotors aren't too expensive. I'm sure the fresh set of Brembos will last a good while.
It's good practice to bleed the brakes every few years. However, as long as the pedal feels good the main reason to do this is to keep the calipers happy. I wouldn't replace a caliper just because the bleeder nipple is stuck, especially since the 9k remans available tend to not be of the best quality. Have you tried using a good penetrating fluid on the nipples for a week or so before you plan to do the job? Nipples are cheap, so you could get a couple of spares on hand in case you damage the old ones trying to get them out.
