Craig has made some very good points that I must agree with. First and foremost, dont take out the lambda or Cold start valve. Have you checked all the Vaccuum connections for leakage? That could explain the hunting at idle. A small amount of hunting is not a big deal but 400RPM sounds too much. Mine hunts maybe about 100-150RPM I experienced some really unexplainable symptoms in my car similiar to your hunting and it turned out to be the lambda computer under the seat. I wish i had only figured it out before spending about 700$ on parts that didnt need to be replaced. Now to A/F guages. I own a narrow band Eelbrock sensor that of course required installing an additional O2 sensor. Honestly for setting fuel mixture they are USELESS. I can turn the mixture key 1-1.5 turns in either direction and not see any change on my meter. Where they are of some help is identifying the limits of your fuel system. But as Craig said you arent going to need it unless you start doing some serious mods to a N/A car. The turbo's are where they are useful. For a N/A start by doing exhaust work, drilling holes in the airbox with a K&N filter, and then if you want more power play with cams and head work. Hope you get things sorted out!
