No, there is no "ideal". It depends on how you set it up, what your needs are, and your climate. If you are using the Davies-Craig controller with the EWP, you can adjust the running temperature of the engine with the knob on the control unit. Generally, setting it to run hotter will result in better fuel economy. Setting it to run cooler will result in more power. I run mine on the coolest setting, a sliver under the 'N' on the stock gauge. When my car still had the stock pump/thermostat, the temp ran exactly in the middle of the 'N'. But anywhere in that general range is acceptable in terms of the engine's health.
If you do not plan on using the controller, there are different stock thermostats available that will allow you to choose the running temperature of the engine. Again, depends on climate etc...
