Nils,
I own a 1975 99LE for 16 years and drive it daily more than half a million Kms. The car had an automatic tranmission and I hace replaced it with a 4 spd and later with a 5 spd.
In case of a well kept car there is nothing to worry about. Saab 99s do leak at this age.
As john wrote, a trans. cooler is a must in order to have it running long.
In case of converting to manual, in case of a car with power steering, the hydraulic pipes make it difficult to mount the master cylinder, but the job can be done. Iwould recomend you not to take the 1972 as a donor car. A later transmission with the chain drive is much much better (I am replacing these days the blown transmission with a chain type to my 1972 2 litre carbburated 99). Taking a transmission from a pre 74 will mean to install a post 75 diff. and flanges on to it.
Good luck,
Oren from Israel
