Generally a screwdriver will do the trick for the defroster vents. The VIN cover is attached by two plastic ears, one on each side, and should just pop right off also.
Re-use the foam backed board and buy some black vinyl. The one I replaced on the 75, I was able to use the old pad as a template, so be careful when removing it if you can.
When I took it to SOC in Hershey, it wasn't glued down at all, and still looked OK. When I returned from Hershey I removed the windshield because I had an up-dated seal for it(wider chrome lock strip and drains in the seal). With the windshield removed, I used contact cement to glue the front edge down. The part that tucks under the three dash pieces is not glued down, nor will it get glued.
