My rusting blue '80 99 had a/c in it. When I bought the rust-free (honest) beige one, I was going to swap the a/c into it from the blue one. A Saab tech told me that, as a dealer-installed option, it took 8 or 10 hours to instal. I don't know if that's exaggerated or not, but it did look like a good deal of work.
Basically, all the stuff under the hood seemed simple enough: compressor (with a roller to keep the belt on) is bolt-on, as is the receiver/dryer. The evaporator (or is it the condensor? I could never remember them correctly) screws on right in front of the radiator (though on mine, the screws really don't want to come out).
Inside the cabin, you replace the standard knee bolster with one that has a/c vents, and the condensor (or evaporator, whichever) fits in the passenger footwell. Of course, you have to drill a couple of holes in the firewall to get the air to the vents.
I found that the car cooled off pretty quickly (both of 'em, since the blue one wasn't working due to no freon), so I decided against the swap.
