coolant disappearing?

95 900s MT 106K mi
For the past 2 weeks I've been getting a coolant low level warning. I would check the reservoir and it would be empty. And right after I would fill the reservoir past the KALT level. The following day it would happen again!!! I have done this 5 times. I park at the same spot at work and see no coolant leaking. The temp gauge is always where it's been. No signs of overheating.
What is going on? But my mpg did increase dramatically.
