No, I haven't eaten at Los Cuates, I'll have to remember that for my next trip out there. You're right, there is a big difference between Mexican, Tex-Mex, and New-Mexican food. I prefer New-Mex food myself. It's also really hard to find good chile rellenos anywhere other than New Mexico. I even saw one place that used bell peppers for that dish!!!
Santa Fe prides itself on it's quirkyness, perhaps that's why the draw toward Saabs. That's the only town I know of where a dirt driveway is a status symbol. Odd place, but beautiful, and good skiing too. The top of the ski area is about 12,000 feet, though and after 12 years on the East Coast, I can't handle the altitude like I used to. Sigh.
