White smoke is typically from burning coolant. If your head is cracked, or the head gasket deteriorates in certain locations, coolant can leak into the cylinder. When this happens, you get a nice big cloud of white smoke when you start the engine. You are not as likely to see white smoke once the engine is running.
Blue smoke is from burning oil which is almost always associated with some type of engine wear - like turbo bearings, piston rings, valve seals, etc. Like the coolant, it can leak down into the combustion chamer while the vehicle is sitting and produce a similar cloud on start-up. You could also notice this cloud under engine load because the increased oil pressure can force oil into the cylinder through these worn parts.
Black smoke is from overly rich combustion - more fuel than is required for complete combustion. On naturally aspirated cars, it is usually due to a poorly adjusted carb or a dysfunctional oxygen sensor (f.i.). On boosted cars, an enrichment is required as boost pressure increases. Sometimes even more fuel is added because it keeps combustion temperatures down and it's always better to be a little rich than a little lean. Burning extra fuel is typically cheaper than burning pistons.
