Engine Lugging and computer learning

I've owned a 2000 Viggen for a year and while it's not been without it's problems I love it.
My questions:
I sometimes(maybe even frequently) mildly "lug" the engine - i.e. 20 mph in 3rd gear. I do this sometimes because it's not warmed up and sometimes because I'm lazy. Should I avoid this at all costs or is some of this OK?
Secondly, I've read that the computer "learns" your driving style. What does this affect and how long does this take(moving average kind of thing?)? Winter driving is different than summer driving(at least here in Michigan)...can this be manually reset before each season? How does the engine lugging play into this?
Thanks
