While dealing with my own bad bearings and other issues, I saw an article that described something similar to your situation - oil pressure warning light flickering even after major engine repair and cleaning. Seems like a copy of an article from the Nines magazine, by Chuck Andrews. Scroll to the bottom of the article, and look for "Case #3". Maybe that will give you an idea.
If the car was repaired by a dealer, there may be a record of what was done, and what was not. So if the bearings were replaced, but the oil pump wasn't, then your symptoms would match the ones in the article.
The article deals mostly with problems due to newer (9-3 and 9-5) oil pumps, but any oil pump can be damaged if there is metal circulating in the oil.
I have also read that the oil pressure regulation valve can get "stuck", or stop working, but I am not sure if that can produce the symptoms you have. Search for posts by Anders/Swedecar on that subject.
