To begin with the throttle body bore and blade gets gunked up by carbon deposits from crank case ventilation system, but that can be cleaned out every now and then (30K miles intervals).
The root cause though of the failures is that the throttle position sensors (TPS) are of low quality.
On older Saabs, the TPS sensor tracks were made of a sturdier material and pretty much never wore out but on the modern cars they used carbon traces instead and they wear out from all the movement of the throttle.
When the carbon traces has been worn through it creates glitches here and there when driving and that's when the car goes into limp home mode.
You cannot really see the wear spots but the sensitive computer that controls the throttle movement picks it up.
On the 99 9-5 and 9-3 Viggen, Saab came out with a software download fix to help the computer deal with an aging/worn throttle body.
