Do not use the colder thermostat.
If coolant does not need to be added, one might question the need to replace the rad. The level sensors can and do fail, sometimes the sensor, sometime the float mechanism in the reservoir. You can use a magnet to trigger the sensor that can be removed from the reservoir and see if it is reponsive. Some reservoirs get waxy deposits from the coolant that might cause problems, but the bigges issue is that is makes reading the level thru the translucent reservoir a no go and the cap needs to be removed to eval the level.
The stat may be ok, but these do not last forever and need to be replaced at some point. To test if stuck open: cold engine, start and idle, feel the upper rad hose, should stay cold until stat shows hot, then the hose goes hot suddenly. If the hose slowly warms as the block warms, the stat is stuck open. Another sign of that is dropping temp indicator when driving at speed.
