Coolent temp sensor weirdness (or not)?

I suspect that the coolent temp sensor on my '95 900S (2.3L non-tubo) is bad. So I measure the resistance when cold (75 deg F)- I get about 15Kohms. When hot, I get fluctuating readings from megs to hundreds of ohms. I thought "great, I'll order one tomorrow". But I learned that the ICE module also uses the signal to control the temp gage (am I right?). The strange thing is that my temp gage has been rock-solid (slowly rising when cold and sits precicely at 9:00). I've never had a CE light.
I know that the system selects a default of 80degC if the temp signal goes out, but wouldn't I see temp gauge fluctuations?
