For the brakes, I would go with Brembo rotors and the later Akebono version Saab brake pads. The Akebonos are about as dustless as you can get. As to the slotted or dimpled rotors, that is up to you but the plain ones work just fine.
For the suspension, trust me, it makes a lot of sense and you should consider at the very least a 22mm rear anti-sway bar and a steering rack brace (both available from site sponsor GenuineSaab.com and others). Next a sub-frame brace, either the 2 point or 6 point version would be a good improvement too especially for a convertible (also GenuineSaab).
I have a 2003 convertible too and it has all the above suspension changes including the 6 point brace. You will notice the improvements in handling, especially from the steering rack brace which helps at all speeds, the other two help with spirited driving. I'm still on the original rotors but I did upgrade to Akebono pads so the wheels would stay clean.
