Dont know if you have already accomplished this or not, (ive never tried the trick with the bottle jack), but this is what I did the last time...
The engine doesnt really move over the the one side all that much. What I I did when I had the oil sump off as well was to support the engine with a floor jack (block of wood between the engine block and the jack), and make sure you point the wheels of the floor jack to facilitate moving the engine to the right site of the car.
You'll need to lower the engine slightly, after you unbolt the motor mounts. Lower the engine enough to be able have some lateral movement, if you dont lower the engine the motor mounts are going to get in the way and you will not be able to move the engine all that much at all. You'll be able to shove the engine over maybe an inch? I used a large wooden pole, making sure I wasnt bracing it against anything fragile...like the timing cover :).
Once you are in that position, you will also be able to rock the engine side to side, dont worry, it wont move all that far. But you will be able to shove it with your hand on the left side of the head, which will raise that side of the motor about 1.5". You'll need to be able to rock the engine in this manner to access some of the torx bolts (a pox on the man that invented torx). When removing the timeing cover, you will be able to drop it a little bit at which point you will need push up on the left side of the engine gaining you a little clearance at the top. Then you will again be able to finagel the timing cove down more.
I honestly dont think pictures would help all that much, because getting the timing cover out in this manner is something accomplished completely by "feel".
Go slow, be gentle, and dont force it.
