Warm air holds much more moisture than cold air. My guess is that you drove the car around warmed up, maybe had a couple of other occupants. Maybe tracked in a little snow on someone's boots. Then you parked the car. Inside temp went from ~70 F to ~0 F. As the air temp cools, it reaches 100% humidity, condensation forms, then frost not soon after.
Drive the car warm with the A/C on to suck up excess moisture. You should be fine. There's no way water is creeping in to your car at these temperatures.
