The check engine lights comes on because a fault is detected. In your case, it would have been due to the O2 sensor detecting a "too lean" condition. (The computer doesn't know if this is a temporary or permanent condition.) After several (don't remember the exact number, but I'm pretty sure it is 50 or less) start/stop cycles of driving without the fault returning, the computer determines the fault is no longer present and the light will go out.
