Adventures in bad MPG Continued

OK...
So before I had thought that my 95 SETC was only getting bad gas mileage durring city driving (14-15 MPG) but two round trips to Albany, about 100miles each way seem to have proven me wrong. My gas mileage on the highway has dropped from 29-30 mpg to 23-26mpg. My original two guesses were a dying DI cassete or Bad O2 sensor, but... The cassette probably would cause the car to have less power and run rough, but it runs fine! The O2 sensor would likely cause the CEL to illuminate if it had died, right? My CEL has yet to illuminate. Checked vaccum hoses, especially to MAP sensor they all seem fine.
So... heres my latest guess: Is it possible that my thermostat is on its way out or stuck open? Lately I have noticed that my car is not running as hot as it used to (just a tiny bit though) and it also takes a longer tine to warm up.
Any suggestions would be greatly appreciated!
