If the stat is good and the fan in-operative, the engine will not overheat when the vehicle is moving fast enough. With some vehicles there is enough air movement at 40mph and higher. With such relative air motion the fan will not run for engine cooling or A/C.
The original post stated that there was overheating at around 60 mph. So that really sounds like a bad stat.
The coolant should be checked with a cold engine as the level might be looking good because of a steam pocket in the head. These high temperatures are not a trivial matter. Search for drs<underscore>install and read the post on thermostat replacement. In an emergency, one can always remove the stat for a short term solution. Years ago one would have to consider that the rad might be full of deposits. This is rare today and probably impossible if the coolant is flushed and filled as required. The old copper and brass rad cores would grow stone on the solder joints at the tube ends, worse as aluminum heads then blocks came along.
