I really do not care for any appreciable gloss on my dash and 303 is the most matte product I can find. It too offers a sunscreen so its plenty safe. Vinylex is an excellent product but its too glossy for my tastes.
Some other excellent protectants are Eagle One Interior/Exterior, Pinnacle's Vinyl & Rubber Lotion, and I know several people who are using Einszett's Cockpit Premium protectant and love it.
All the above are excellent products that will provide terrific results.
