I like to clay on a completely clean surface - usually, if I'm going to spend all day detailing a car, I'll strip off all the old wax with a soap that contains no additional waxes or polishes, like a dish soap.
Regarding tips for the actual claybar process..
1) Keep the area small, no more than a 2x2' area
2) Keep the surface well lubricated (usually a kit will come with some type of spray, but any quick-detailer spray can generally be substituted)
3) You don't have to apply pressure to the clay - let it do the work. If you feel it start to drag, add more lubricant.
4) Wash the car again afterwards, as you'll probably have some degree of residue from the detail spray.
5) Admire how smooth the finish is :)
