Weight limits are not for the capacity of the airplane, but for the ability of the handlers to carry the bags. Their contract with the airline probably limits the number of 50+ lb bags they can carry per day, or something like that. The airline tries to match this by discouraging heavy bags. It's fair, in my opinion.
You'll actually notice that if you're flying on a small plane, the airline may limit your total bag weight to something small. For example, I recently flew Island Air in Hawaii, and they have a limit of 44lbs total luggage. In this case, the weight restriction has to do with the capacity of the plane. They can't count your total weight (body weight + luggage); that could easily be considered discrimination. However, you may find that they're lenient if you're not a large person. I got on with 49 lbs of luggage.
Back to the stolen camera thing...I bet a good lawyer could beat that disclaimer in court. If your electronics were damaged, you might be at fault for putting them in checked bags. However, if your camera was stolen, someone else is at fault--either the airline or the TSA.
