I have a removable "touring" windshield, heated grips, and the system cases, so it serves as my all around commuting, touring, and grocery-getting bike. For a BMW it's light (525 lbs), but it's still stable on the highway well past 100 mph, though the R-bike vibes begin to get you up at these speeds. Keeping it below 85 brings no such problems; the K-bikes I've test-ridden have been smoooth all the way up. I bought my black beauty used in January with 20,000 miles on it and all the accessories for a good price ($6000); it's needed nothing so far, and has no surging issues (pre-dual spark). Mine came without ABS or linked brakes, but I have 15 years of regular riding experience behind me and don't miss those features too much. You might want to consider getting a bike with ABS as it takes some of the panic out of panic stops. BMW brakes are impressive, and the Telelever is pretty cool and composed (if a little numb), coming from forks.
I am 6'1", and it fits me fine, though I had to buy a higher/firmer seat for long-term comfort. I also second the recommendation for good riding gear: I've been down twice (on my old bike, back when I was learning) and much preferred the results when I was wearing leather.
Anyway, test ride other brands before you make any decision; I was coming from a BMW and ended up on another BMW, but there are tons of great bikes out there. I truly enjoyed testing the gamut, from Suzuki Bandits to Kawasaki ZZR1200's (Holy Fast Batman!) to Honda ST1300's; something will suit your purposes and just feel "right".
Best,
Lutfisk
