As was mentioned, if your 'surrond sound system' is an actual receiver, you'll want to route all the audio through it. Running video through it too can make things more convenient, but being that you have three different kinds of video signal (composite, component, and DVI), there is no real convenience advantage, because you still would need to select the respective inputs on the TV. To get your cable box working through the surround sound system, you have to route it's audio to the receiver. If the cable box has a digital audio output, you'll want to use that, assuming your receiver has a compatible input (it should unless it's many years old). You could also route the audio from your TV's audio output to the receiver, though there's no real advantage to doing so.
I like to set up my system so that the TV is only a monitor - no audio going to or coming from the TV whatsoever. This tends to simplify things because I know EVERYTHING goes into the receiver which acts as the 'brain' of the system, if you will. Your receiver may not have enough inputs to accommodate this, however.
It can seem pretty complex at times, but it's really not. The hookup is really the easy part, it's setting up one remote to operate everything is the tricky part.
