Here's a good recipe, tasty and elegant, and pretty easy too.
Sear-roast the venison: we usually do this with a cast iron pan outside on the grill, since pan-searing inside the house is too smokey. Sear the outsides then remove from the pan and cook over pretty high heat until it's done how you like it.
Combine roughly equal amounts of good red wine and port, add some chopped shallots, and reduce until thickened. Strain out the shallots, then put back on the heat, whisking in some dark chocolate (at least 70% cocoa). Voila this is your sauce.
Very delicious with sauteed baby carrots with butter and roasted potatoes with rosemary, or some sauteed wild mushrooms and a brown rice pilaf. Venison can be a little dry but with careful cooking and a savory sauce you can do it without involving bacon. The sweetness of the sauce goes well with the gaminess of the deer.
Another recipe I have on hand, but have never tried, calls for pureeing chicken breasts and mushrooms, then coating the venison loin in this mixture before cooking. Sound grand but I'm not going to try it until I get a good, big cut of meat.
