How about arriving in Amsterdam (very walkable city - or even better, rent a bicycle) and visit the Rijksmuseum.
Rent a car and go to Belgium and see Bruges and Ghent - extremely well-preserved Renaissance towns (and don't forget to buy chocolate!).
Continue through Luxembourg (remember to fill the car up before the French border) and go to Alsace - Strasbourg (city), Colmar (town) and Riquewihr (village) - incredible amount of mediaeval architecture still intact.
If you reserve a table now (for late August) you could eat at the "Auberge de l'Ill" in Illhaeusern near Colmar - arguably the best restaurant in the world.
If you like the beach then continue down to the south of France. If you're into millionaires' way of life turn east towards the Côte d'Azur (Cannes, Monaco); otherwise I strongly recommend turning westwards to Montpellier (and the menu gastronomique at "La diligence").
If you don't mind hot weather ... forget all the above and go straight to southern Spain: Seville, Cordoba and Granada - and if you've ever seen anything even half as beautiful as the Alhambra ... please let me know!
