Mid to late july is the best time visit. It's still bright the whole night through, and the temperature is at it's highest (about 14°C average during the day).
Icelandair advertise that when you can book a flight with them from Europe to the US (or the other way around) you can select to stay in Iceland for up to seven nights and pay no additional airfair. That's something you might want to look at. Check Stopover/Multi-City on icelandair.com for more info.
Things to do and see, depends on your budget and interests. There is plenty to see in the vicinity of Reykjavik, but that could also be said about anyplace in Iceland. If you plan on doing any serious photography you would probably be better of on your own. Photography can be pretty time demanding and having to rush to keep up with the tours schedule could be frustrating. I could show you some pretty cool places within two hours drive from Reykjavik if you'd like.
We had a group of Kosovo Albanians studying air traffic control at work, and we took them for a two day's trip around the south of Iceland. We went to Þórsmörk (Thor's Mark), Gullfoss (Golden Falls) in Hvítá (White River), Haukadalur (Hawks Valley) hotspring area, and river rafting on Hvítá (Below the falls;).
