Ostrich and potatoes are a new one to me. Maybe your vet owns an ostrich farm.
Most all-natural and raw diets differ from 'traditional' diets in that they are very light on carbohydrates/heavy on protein. So I'm just as surprised to see potatoes in the diet as I am the ostrich.
The argument for the 'barf' diet is that it more closely approximates the diet of a wolf or wild dog, which of course is what a dog is designed to digest. I suppose there could be wild dogs in africa hunting down ostriches and digging up potatoes, but it seems far fetched to me. I alternate chicken thighs and ground turkey - both of which I can find pretty cheap in bulk.
Someone else suggested salmon oil, and that's a great supplement to the meat. It's also important that you supplement vitamins and add a little ground vegetable as well. The kennel where I got my dog has some good articles and diet plans on their website: http://www.leerburg.com
I'd also suggest you look into some of the arguments against these diets. The jury is still out, though it seems like more and more vets are beginning to recommend switching.
