As the owner of a 9000 (Aero) and a '00 Legacy Outback, there's no comparison. While the Outback is a fine car, there's a whole list of things that fall short, the most important/noticeable being the seats.
The sound of the windows when you roll them up, the frameless (Noisy) windows, the unfortunate (typical) torque-less low end of a "normal" 4-cylinder, the loose feeling to the steering (I put an IPD sway bar up front to help the handling, but it's no Saab), the noisy rear windshield wiper, etc, the seats (My 9000, and my parents' 9000 without the Aero seats, were 12-hour day cars. I put 900 miles on my car, then 225 miles on my dad's 9-5 in a single day. The Subaru makes my back ache after about an hour.)
Saabs are far from being perfect cars, but I laugh when people say that Subarus are the new Saab. Granted, I haven't sat in a new Subie, but I haven't sat in a Saab newer than an '01 either.
Unless the new Subies are head and shoulders above the last generation, they're not even up to the solid build quality of my 15 year old 9000. My brothers' (3) C900s and my '85 BMW 325e felt more well put together than my Outback.
The Subie is a fine car, and it does what it's supposed to. But it simply lacks the solid feel and personality of a Saab.
