I've upgraded (size wise) several Mac hard drives (laptop and desktop) over the last twenty years. They work just fine & booted from the install disc.
The break even point for a new Mac purchase comes because there is a raft of stuff included in the price. If you already have a bunch of Windows add-ons sitting about, thePC will be cheaper. Then you can decide if the price differential is worth it. Apple is always at the head of the customer satisfaction surveys for a reason.
