I grew up there, still have family there... august is the best time to go (for most people, anyway)...
First of all, I will disagree with noname wrt beer and suggest Keith's instead... though it's not as wheaty as it used to be... Propeller is good stuff also. There are lots of wineries in the Annapolis Valley (it's a microclimate + the focus is on local varieties), so there is opportunity for a mini wine tour there.
In terms of driving, the Cabot Trail is a good one. Good hiking + golf up that way also. PEI is also good for golf + can now drive over the bridge from NB vs waiting (and waiting and waiting) for a ferry...
Newfoundland is beautiful, but it is a decent ferry ride to get there. If you can do it, go up the west coast + if you like hiking, check out Gros Morne... there are some pretty remote feeling areas there, but the scenery is beautiful + the people are awesome... I've got lots of great friends from up that way (Pasadena etc)... St John's has lots of character if you're looking for maritime city/nightlife...
if you're a foodie, there's lots of great seafood everywhere...
beaches in PEI are sheltered + "warmer" (not sure where you're coming from)... well suited to kids... there are lots of beaches along the south shore of NS, but the water's usually colder, with more direct ocean exposure so there is some surfing (though that time of year, it is mostly flat - ie longboarding unless one gets lucky with a tropical storm, and quite frankly, the good spots in a TS are not the beaches, but harder to find, usually rocky, point breaks)... you can see my bias here...
lots of historic stuff... anse aux meadows (north of Gros Morne), citadel in halifax, lousibourg, habitation/fort anne near annapolis royal, etc... PEI is all Anne of Green Gables if you like that stuff...
so all depends on your interests... make sure your Saab is in good shape before the trip, as there's not a lot of Saab support there (Forbes in Halifax is about it)... good luck! enjoy!
