Oil pressure is a function of viscosity (which varies with temperature) and engine running clearances. Running the car hard or fast can shear back the oil but with today's oil I wouldn't worry about the hard running dropping the oil pressure (well, I guess there's always the possibility of opening up a bearing but it's low prob) other than the high temps. And there's the wub...you don't know the engine oil temperature while you have the low pressure. By the time you got back to your apartment oil temps should have dropped to below 230F so oil pressure should have been normal or what you see around town on a warm day with AC on.
Soooo..you can probably go to a 15W-40 synthetic without problems (maybe a drop in mileage but not enought to bother with from 10W-30) but I'd be more inclined to guess your oil pressure relief valve spring is weakening or leaking. Try a load of 15W-40 (amsoil makes such an animal..it's their marine/diesel/gasoline engine oil) and see if your oil pressure stays higher at idle.
MOST important is your oil pressure above 1500-2000 rpm....by that time the pump should be maxing out and the oil pressure relief valve controls max pressure. I think it should be above 30psi...I don't have the book for 9-3's so you might have to look it up.
