I didn't do it in my car, but I've done it at home with other things, such as a light dimmer. My lights are all relay controlled, so power wiring doesn't go through the wall switches. Thus to operate a dimmer, I had to mount the dimmer in the basement and have a remote potentiometer at the wall switch. I used cat5e cabling since that's what all my wallswitches have in them. It's a good all purpose low voltage cabling.
You would use a solder-sucker or desoldering braid to remove the pots from the APC box. Most pots have 3 conductors (one for the moving part, one on each end of the resistive material). You could use a piece of cat 5 (8 conductors) to extend the connection to the interior of the car. Shielded cat5 would be more rugged. You could use keystone jacks for the cat5 if it's not to be permanent.
If you use different pots, be sure to get a comparable resistance range and taper behavior (pots are either linear or logarithmic taper, most non-audio applications have linear taper). You can buy (or recycle) a multitude of pot knobs for any application.
One other idea would be to have test points such as banana jacks near the pots so you could measure their resistance after making adjustments if you need to get it back to a particular spot.
