Get an 82 degree thermostat to keep things running a bit cooler, but in the end, its the air temperature that really matters. The thermal heating process will always occur when you're dealing with combustion. One thing some people have done is use ceramic coating to keep things under the hood cooler. In fact, I once heard someone say they could touch their ceramic coated intake manifold bare handed after driving which would mean that the heat was greatly reduced. Water injection would give you the most effect, though...
