Yes, I did misunderstand. You said it affected pedal feel, without any qualification, and I mistakenly assumed it would be at least a small portion of the time. What you're actually saying is that pedal feel will be affected in the 0.0001% (or probably much less) of the time that you experience full brake lock, which incidentally is the least likely time you would be concerned about such a thing. I think we can safely say that pedal feel is not a factor affecting the decision to use stainless brake lines.
