They do tuning for the 9-5 too. Again, tuning the 3.0 is not recommended as it is not as strong a unit as the 2.3. I believe the 3.0T is a light-pressure turbo and it seems there's a reason why Saab did it that way. It is a variant of the Vauxhall/Opel V6 engine, whereas the 2.3 is more-or-less completely developed by Saab.
Because most tuners adopt the same attitude towards the V6 engine, I think you'll find very little in the way of tuning parts for the V6.
Maptun are in Sweden, but they speak very good English. If you're in the US, they have a US dealer, but I can't remember the name (I live in the UK and deal directly with MapTun). They have a couple of 9000s with the 2.3T engine producing 360+ hp - one is available to test-drive if you can get over there (wish I could). I spoke to Johnny at MapTun today and he said their current project is to build a 450hp 2.3T engine for his colleague Fredrik's 9000. He says he told him it wouldn't last long, but Fredrik said "I don't care, I just want to have the fastest..."
I believe MapTun are one of the few tuners so far to be able to reprogram the Trionic 7 (as used in the 9-5) effectively. I understand the 2.3 in the 9-5 requires a bit more tuning to get extra power than the 9000 (the 9000 engine has a lot of spare potential). Be prepared to pay for new injectors, inlet modofications, etc. if you want a significant power increase.
Also, I believe the 9-5 2.3 light-pressure turbo has a significantly smaller turbo than the full-pressure turbo (Aero).
