Compressor maps? (Lost in the woods...)

Greetings.
I'm trying to evaluate turbo upgrades for the Stealthbomber (87 SPG, modestly modded as shown below). The helpful fellow at Turbonetics suggested T3 with 50 compressor, but I'm cursed with genetic defect: I have to understand WHY, not just what, and I'm not sure he has had experience with modded Saab motors. In any event...
I downloaded compressor maps but cannot figure out how to interpret them? How does one correlate them to the motor in the car? How do you figure out the RPM ranges where the power lies, when it comes alive, when it peaks, etc?
And, er, what is the collective wisdom concerning upgrades to the old-style Garret T-3 flange, assuming 250 is upper limit of hp demanded, ideal power band is 3000 to 4500, etc. Willing to live with slightly later peak boost (compared to stock) if the upper end is a bit stronger and hangs in longer.
Thanks for any helpful suggestions, thoughtful comments or wildly amusing responses. Cheers!
The Stealthbomber: 87 SPG, Modestly Modified
(Open K&N, 24 lb injectors, 3.0 bar FPR, sport exhaust,
rewired APC, SPG9 AID, MBC in-line between turbo and
BCV, solid SD motor mounts, recently rebuilt motor
and tranny with upgraded pinion, braided s/s brake lines.)
